Cauliflower steamed with whole spices

Cauliflower Steamed with Whole Spices

  • 3 pounds cauliflower (1 medium head) broken into small flowerettes
  • 4 to 5 tablespoons vegetable oil
  • 1 teaspoon whole cumin seeds
  • 1 teaspoon whole coriander seeds
  • 1 teaspoon nigella seeds
  • 1 teaspoon mustard seeds
  • 1 dried red pepper
  • 1 medium onion diced
  • 8 cloves of garlic diced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1/2 teaspoon ground turmeric (cucurcima)
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 cup water

Heat a 12 inch skillet or saute pan over a medium high flame. When hot add enough oil to coat the bottom. Add the whole spices (cumin,coriander,nigela and mustard) when the mustard seeds begin to pop add the dried chili. It will brown immediately, turn over quickly so it browns on the other side.Lower the heat, add the onions and garlic. Stir and fry until the onions are brown but not burnt.
Add the cauliflower, ground coriander,ground cumin, turmeric,salt and the cayenne (if you are using it, I don't). Stir to mix. Add 1/4 cup water, it should start to simmer. Cover and lower the heat. Steam the cauliflower for 15 minutes on low heat, stirring every 5 minutes until all the water is evaporated.

  1. thanks for your note on the "other theres's" blog. i will look for the actual recipe. surprisingly, it does not take too much blue cheese. before the end of the weekend, i will post it on my blog.


    i have not been to merida. but we went to holbox last year, and it seemed we were "set up" because everyone we met was from merida.

    embarrassingly, i did not know much of it before.

    I hadn't heard of Merida until we came here on vacation. I still haven't made it to Holbox and we've lived in the Yucatan almost 6 years now. Oh, check out the hojaldras recipe if you miss Panamanian food, they are really easy and really tasty!

  3. i have not made time to get the cauliflower, blue cheese recipe out, but i will, in the next few days. i did notice that deb, from "the other woman cooks" has a mashed potatoe recipe posted with a dairy mixture that i think would be very good in a cauliflower puree. (she put goat cheese in it !!!!)

  4. "hojaldras recipe," i will check this out. regarding holbox, swimming with the whale sharks in august was one of the highlights of my life.

    we stayed with a friend. down the street from her, they just opened a resort. i spent much of my day over there. oh, dear heaven. a part of my soul is still next to the pool. i crave to be there again. las nubes.

  5. i found the recipe for the "blue cheese and cauliflower soup." I also found one that i had forgot about, "oven roasted cauliflower, broccoli, and tomatoes with blue cheese crumb topping." i will cook, photograph and post them on my blog. in the next couple of days.

  6. Hi Marie! I will be checking out "the other woman who cooks" blog. I tried just making cauliflower soup and putting in a small amount of blue cheese but it didn't come out like I thought it should. Mr Dog ended up eating it. Which is weird because normally I like blue cheese.
    I love oven roasted veggies, I can't wait to see all the recipes on your blog. Thank you so much for taking the time to comment and to post those recipes.
