Husband had his cholesterol counted or what ever it is that they do. Dr. Duran looked at it, and was not happy. Then he said to me in a conspiratorial tone, you do realize that if his is like this, then yours is probably not too far behind.
The doctor is confident that just a few changes and everything will be better soon. He has banned pork! He isn't too happy about beef either which leaves chicken and fish. Husband isn't fond of chicken and I have never learned how to cook fish.
There was some mention restricting the consumption of chocolate, dark beer and yellow cheese. I must be the only woman on the planet Earth who would rather eat Gouda than Godiva, but there you are. The really sad thing is that I think cheese is the culprit.The upshot of all this is that for the next three months we're being primarily vegetarian.
Today we had whole wheat flat bread, it was supposed to be pita, but I learned today that you can't make pita bread in a tabletop oven. Grilled eggplant, zucchini and spring onions.
I also made couscous, tabbouleh and a garlic tahinni dip.
It was all good and we ate moderate amounts. Maybe this won't be so bad after all?
Nopal! ¡Nopal! Fresh or dried in capsules, take as much as you can. If you like eating it then try and do so every day. Me, I'm not real happy with its okra like qualities so I take the capsules.

I hope you'll do a blog entry about how to properly prepare nopal. I have had it done a few ways that I liked but i don't know where to start.

I have lost 42 pounds, my blood sugars are normal again, and I am healthier.

Hi Ron, thanks for the offer, if our new eating plan doesn't work out, I'll check into yours. I think the big problem is what we've been eating in Mexico compared to when we were NOB. You can only eat so much cochinita and tacos de chicharo before it catches up with you.

I've had to do some research on cholesterol too. My daughter has the inherited protein in her blood that make her prone to high cholesterol. So at 10 years old she has total numbers in the 260's. Her father died at 35 from a heart attack of the same problem. Just wasn't caught. Her grandfather had numbers in the 700's when they caught it in him. The doc said limit high fat dairy, bad red meat, pork, egg yolks and anything trans and high saturated fat. We are supposed to try and keep the saturated fat about 9grams per day and trans fat to nothing if possible.
